Great question and a good suggestion for something to develop. I don’t have a concrete example of “medical specialty” or “medical procedure”, however it looks like Schema.org does have a “medical entity” type, with many properties underneath. (http://schema.org/MedicalEntity). You may want to post the question in on Community Forum to see if anyone else has something they can share – which may give you a quicker answer.
